Menu Plan Jan. 5th - 11th

Monday: Easy Stroganoff, Corn
Tuesday: Baked Chicken, green beans, rice
Wednesday: Homemade Mac & Cheese w/ broccoli, rolls
Thursday: Roast beef w/ potatoes, carrots, ect
Friday: Leftover buffet
Saturday: Roast beef pizza
Sunday: Egg Casserole, fruit salad

{Easy Stroganoff}

3 cans cream of mushroom soup
1 16oz container of sour cream
1 medium onion diced
1/2 packet dry onion soup mix (I use Lipton)
round steak cut into bite size pieces (you can use any beef you would like)
1 bag egg noodles (cook noodles as per package directions)

Saute onion in butter until soft. Add meat and cook until browned. Add soup, sour cream, and onion soup mix, then heat thoroughly. Serve over noodles and add a salad. This is a favorite that my kids ask for all the time.

Homemade Mac and Cheese
1 bag of large elbow noodles
2 eggs
1/2 cup milk
4 cups grated cheddar cheese (I like to mix motz and cheddar) add more cheese if needed. Bobby likes his extra cheesy
2 broccoli crowns (chopped)

*boil the elbow noodles in a large pot and strain when finished
*beat together the eggs and milk, and mix in with the noodles
*in a large casserole dish layer your ingredients. As follows: noodles, cheese, broccoli, noodles, etc...
*bake at 375* for 35 to 40 min, or until browned on top.
*serve and enjoy

Egg Casserole

6 eggs
1 lb. sausage, bacon, OR ham
3 c. milk
8 oz. cheese
1 1/3 c. crushed crackers
1 tsp. mustard
pepper & salt*

Combine all ingredients. Pour into greased 9x13 pan. Bake at 350 degrees for 45 minutes - 1 hour until golden brown.

*Sunday: My turn-Pancakes, Eggs, Bacon, Fruit

*Monday- Turkey roast, Scalloped Potatoes (electric fry pan), frozen veggie
*Tuesday- Veggie Chili, Corn bread
*Wednesday- Cheesy Mac, Peas, Banana Pudding
*Thursday- Leftovers
*Friday- Chicken Enchiladas, Mexicorn, Spanish Rice
*Saturday- Sloppy Joes, Baked Beans, salad
*Sunday- (My Turn) Cheese Soufle, Fruit Salad, bacon, toast made from homemade bread.

Slow cooker roast beef & roast beef pizza

Here are 2 recipes that I have come to love!! I found both of these at www.allrecipes.com .

Slow Cooker Roast Beef
INGREDIENTS:
  • 3 pounds beef chuck roast
  • 1/3 cup soy sauce
  • 1 (1 ounce) package dry onion soup mix
  • 2 teaspoons freshly ground black pepper

DIRECTIONS:

  1. Pour the soy sauce and dry onion soup mix into the slow cooker. Mix well. Place chuck roast into slow cooker. Add water until the top 1/2 inch of the roast is not covered. Add the fresh ground pepper over the top.
  2. Cover and cook on low for 22 hours.
This was SOOO good! A big hit for everyone!

Roast Beef Pizza
INGREDIENTS:
  • 1/4 cup olive or vegetable oil
  • 2 tablespoons cider vinegar
  • 1 tsp garlic powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups chopped cooked roast beef
  • 1 tbsp dehydrated onion flakes
  • 1 1/4 cups sliced mushrooms
  • 1 1/2 cups shredded fiesta blend cheese
  • 1 (1 pound) loaf frozen bread dough, thawed

DIRECTIONS:

  1. In a large resealable plastic bag or shallow glass dish, combine oil, vinegar, garlic, salt and pepper. Add beef, onion and mushrooms; toss to coat. Refrigerate for at least 2 hours.
  2. Meanwhile, let dough rise at room temperature for 1 hour. Punch dough down and roll into a 14-in. circle. Transfer to a greased 14-in. circle. Transfer to a greased 14-in. pizza pan. Drain and discard marinade; arrange beef and vegetables over crust. Bake at 375 degrees F for 30-40 minutes.
This recipe is my variation to the one on Allrecipe. But, it turned out AWESOME! Instead of using frozen bread dough, I made some pizza dough using my bread machine. It turned out really good. Definately a recipe that will be used in the future.

As a side note, I just used the same roast beef from the slow cooker meal for the pizza. That way I got 2 different meals out of one, and leftovers too!!

New Blog

So, I've decided I needed a separate place to put my menus and favorite recipes that I come across. So, this is it! Hope those who come across will find something to their liking. :)

So, I've been really striving to keep up on my menu's. I am striving to get a whole month done...yet, I haven't made it that far. So far, I can only focus on one week at a time. So, in all of my blog searching I have come across some rather great sites that focus on menu planning. I saw that they posted their menus for the week and I figured, what the hey--I might as well try that too.

So, on to the menu:
*Monday - Pizza Mac (pg. 110 in "101 things to do with Mac & Cheese), salad, Corn
*Tuesday - Roast Beef, Mashed Pots & Gravy, Corn & green salad
*Wednesday - Left overs
*Thursday - Roast Beef Pizza (found this recipe on Allfood.com, Salad
*Friday - Chicken, Baked potato, Green Beans
*Saturday - Left overs
*Sunday - Barb's Turn! :)

I know, nothing too exciting, but at least I know what I am making this week. Hopefully, I can keep this up...we shall see.
